Macaroni Horkatiko (Village Macaroni)

This simple pasta dish is made with just three ingredients, chicken stock, mint and halloumi that’s it.. Simple and delicious.. Takes 15 mins and perfect for a lunch or dinner..

SERVES: 4-6

PREPTIME: 5 minutes

COOKING TIME: 10-12 minutes (until pasta is aldente)

INGREDIENTS:

400g Macaroni

750 ml of Chicken Stock

A good handful of fresh mint (x 2 tbls of dried mint)

Whole Grated Halloumi

Salt and Pepper - to taste

METHOD:

Fill up your saucepan with chicken stock and bring to the boil.

Add your pasta and cook until aldente (see packet for instructions approx 10-12 mins)

Finely chop mint if using fresh.

Grate Halloumi

When pasta is cooked drain reserving some of the stock.

Add a little of the stock back into the pasta.

Add the mint and halloumi and stir together.

Spinkle over the remaining halloumi, garnish with fresh mint leaves. And serve. So simple, so simple.
