Kolokopites

These are a traditional Cypriot pumpkin pasty, filled with pumpkin, bulgur wheat, raisins and spices.. Yes it was me that ate all these pies. They are delicious. Simultaneously sweet and savoury.

KOLOKOPITES

SERVES: Makes approx 16-18

PREP TIME: 30 MINS

COOKING TIME: 40-45 MINS

INGREDIENTS:

PASTRY:

450g Plain Flour

Half cup oil

2 tbsp. sugar

200ml Water

FILLING:

300g Pumpkin or Butternut Squash

Half Cup pourgouri 

Quarter cup oil

Cinnamon

Pepper

125g Raisins

2 tsp. sugar

METHOD:

Preheat oven to 180 deg. C for 40-45 minutes

1. Mix all ingredients of dough together kneed well to form a smooth dough ball. 

2. Cover and allow to rest while preparing ingredients for filling (at least half an hour. 

3. Boil the Pourgouri for about 5 minutes. Drain and allow to cool. 

4. Dice the pumpkin into 1cm small pieces. 

5. Mix all filling ingredients together. 

6. Roll out the pastry to 2-3mm thick. 

7. Using a saucer as a template, cut the pastry into discs 15cm diameter. 

8. Put a tablespoon of filling in the centre of the pastry. 

9. Fold the pastry  over the pumpkin mixture to form a semi-circle and fold over the edges (like Cornish pasties)

10. Bake in a pre-heated oven on 180 degree C for 40-45 minutes.
