Greek Cypriot Semolina cake with spiced syrup.

 

Galonbraman in Greek means ‘Good Thing’ and that is exactly what this cake is. Baked with semolina and ground almonds and then drenched in spiced syrup, if you have a sweet tooth this is certainly for you.

GALONBRAMAN

SERVES 8-10

PREP TIME: 5 MINS

COOKING TIME: 30-40 MINS

INGREDIENTS:

300 grams of Semolina

150 grams of sugar

200ml vegetable oil

4 eggs

2 tsp of baking powder

A few drops of vanilla extract

50 grams of Ground Almonds

A handful of flaked almonds

2 Tbsp of Milk

Spiced Syrup

150 grams of Sugar

200ml of water 

3 Cloves

1 cinnamon stick

METHOD

Pre heat your oven to 180 degrees fan oven.

Start with the Syrup - add sugar, water, cloves and cinnamon to a saucepan and bring to the boil on a med-high heat. Continually stir at the start until sugar has dissolved. Then simmer for a few mins until the water starts to discolour and get slightly thicker. Leave to the side to cool.

Then for the Galonbrama, put all ingredients in a bowl and whisk together. Grease an oven proof cake tin, pour the mixture in and then sprinkle with flaked almonds. Place on the middle shelf of an oven for about 35-40 mins. When the cake is ready remove from the oven and whilst still warm pour over the syrup evenly and allow the syrup to soak in. Delicious…
